For all our Chinese food lovers, here is a fried rice recipe I eat almost every day.
Bragg’s Liquid Aminos (shop link here) will be our substitute for soy sauce. While it is still soy-based, it is unfermented and does not contain thickeners or additives– both sources of increased stomach acidity. Because the thickeners have been removed, Bragg’s is quite concentrated, so you will need much less than a traditional soy sauce. Fried broccoli has the advantage of not adding water, and its caramelization imparts a light sweetness.
Don’t be shy with the olive oil here. Because the low acid diet cuts out most sources of fat, this will be one of your main sources of healthy fats, which are necessary for the absorption of nutrients and the integrity of nerve fibers, and help to keep you full during the prescribed 4 hour wait between dinner and bedtime.
