Spaghetti with Prawns

  1. The prawns are prepared by removing the heads and peeling the bodies. We make a short broth with all of those " offal " and a little water that we can use to cook pasta in or freeze for when we need a fish or seafood broth.

  2. Brown the sliced garlic cloves and chili in plenty of extra virgin olive oil in a clay dish. When the garlic starts to brown, add the shrimp bodies, remove from the heat, and cover with a plate to allow the shrimp to cook in their own steam over the hot oil.

  3. We cook the pasta according to the package directions, taking into account that it is customary to cook it in a liter and a half of water with 10 g of salt and no oil. The advantage of spaghetti is that, because it is a fine pasta, it cooks quickly, practically in the time that the prawns are cooked with the fire turned off.

  4. When the pasta is al dente, we transfer it to the bowl or source from which it will be served. We sprinkle our garlic prawns over the spaghetti and stir to coat it with the flavored oil that we enjoy so much when we eat the prawns as an aperitif, and we distribute the prawns to present them beautifully. We bring it to the table right away.
